Picar la zanahoria, la cebolleta, el ajo fresco, los espárragos verdes y el calabacín y saltear las verduras en una sartén con un poco de aceite de oliva, añadiendo un poco de sal.

Ingredientes para cuatro personas:

  • sal
  • cebollín
  • perejil

Para el caldo de pollo:

  • 1 zanahoria
  • hojas de puerro
  • un muslo de pollo
  • 1 canal de pollo
  • 1 1/2 l de agua
  • sal
  • perejil

Cómo preparar la receta de Vichyssoise:

Para preparar el caldo de pollo, poner la zanahoria, las hojas de puerro, algunas ramas de perejil, el muslo y la canal de pollo en una cacerola . Cubrir con agua, añadir sal y cocinar durante 20-25 minutos. Colar la mezcla y reservar.

Limpiar y picar la cebolleta y el puerro y ponerlos en una sartén con mantequilla y aceite. Añada las patatas peladas y cocine a fuego lento, añadiendo sal . Vierta el caldo de pollo y cocine por 12-15 minutos.

Triturar la sopa con la trituradora eléctrica y colar. Añada la crema líquida mientras se mezcla bien con una cuchara y colóquela en el refrigerador para que se enfríe bien . En el momento de servir la vichyssoise, espolvorear la cebolla y el perejil bien picados.

  • 2 huevos
  • 4 lonchas de jamón

Para la crema de champiñones:

  • 600 gramos de hongos
  • 1 papa
  • 300 ml de agua
  • 1/2 l de leche
  • aceite de oliva virgen extra
  • sal y pimienta
  • Para la crema de tomate:
  • 6 tomates
  • 1/4 pepino
  • 1/4 pimiento verde
  • 1/2 diente de ajo
  • pan rallado empapado en agua
  • aceite de oliva virgen extra
  • sal

Cómo preparar la receta de la crema fría para tomates y setas:

Para preparar la última receta de sopa fría, ponga las lonchas de jamón entre dos papeles laminados y hornee durante 10 minutos a 190 grados . Cocer los huevos en una sartén con agua hirviendo durante 10 minutos, pelarlos y guardarlos.
