Receta de espárragos trigueros con alcachofas y vino blanco

Ingredientes:

  • 300 gramos de espárragos trigueros
  • 1 kg de alcachofa
  • 3 dientes de ajo
  • 1 cebolla
  • 1 huevo
  • 300 gramos de tomates fritos
  • 150 ml de vino blanco
  • 150 ml de agua
  • Sal, perejil, pimienta

Modo de preparación:

  1. Cortar los espárragos en trozos de unos dos centímetros.
  2. Limpiar y cortar las alcachofas en cuartos . Dejar reposar en agua y zumo de limón.
  3. Cortar la cebolla en trozos pequeños.
  4. Saltear la cebolla y añadir el ajo. Agregue sal y pimienta.
  5. Cuando la cebolla esté transparente, añadir las alcachofas escurridas. Saltee y mezcle los espárragos picados después.
  6. Añadir los tomates fritos a la preparación.
  7. Macerar el ajo con el perejil. Añadir el vino blanco.
  8. Verter la masa en la preparación anterior. Agregue agua y revuelva. Cocine durante 20 minutos a fuego lento.
  9. Batir el huevo ligeramente con un tenedor y añadir.

Receta de crema de espárragos con queso y jamón

Ingredientes:

  • 4 hojas de filo
    masa
  • 1 kg de espárragos trigueros
  • 1 cebollín
  • 2 puerro
  • 100 gramos de arroz
  • 150 gramos de requesón
  • 200 gramos de jamón cocido
  • Aceite de oliva, sal y pimienta

Modo de preparación:

  1. Hervir los tallos de los espárragos en abundante agua junto a los tallos de puerro y la cebolla tierna. Dejar al fuego durante 20 minutos. Colar y almacenar el caldo.
  2. Por separado, picar el puerro, la cebolla y la porción media de los espárragos (reservar la punta) y colocarlos en una cacerola. Utilizar aceite de oliva, sal y pimienta.
  3. Añadir el arroz a la sartén, saltear y añadir el caldo. Vierta sal y pimienta y cocine todo durante 15-20 minutos. Cuando esté listo, aplaste la preparación. Agregue sal al gusto. 
  4. Cortar el jamón en dados pequeños y colocarlo junto al queso en un bol. Ensamblar los panecillos con la pasta filo y freírlos.
  5. Cocine la punta de los espárragos trigueros en el microondas durante dos minutos y medio dentro de una olla cubierta con papel plástico. Tome la precaución de hacer una abertura mínima para que la cocción tenga oxígeno.
  6. Servir la crema decorada con puntas de espárragos y rollos de hojaldre.

Receta de espárragos trigueros a la plancha con jamón

Ingredientes:

  • 500 gramos de jamón en lonchas finas
  • 10 ó 15 espárragos trigueros
  • Aceite de oliva, sal de roca

Modo de preparación:

  1. Cocine rápidamente los espárragos en un plato o parrilla.
  2. Envolver cada espárrago con una o dos capas de jamón.
  3. Cocine hasta que se doren.

Receta de canelones de espárragos trigueros y pollo

Ingredientes:

  • 15 espárragos trigueros
  • 4 pechugas de pollo
  • 20 hojas de canelones
  • 250 ml de leche
  • 50 gramos de harina
  • 100 g de queso rallado
  • Aceite de oliva, nuez moscada, sal, perejil

Modo de preparación:

  1. En una cacerola de agua hirviendo con sal , cocer la pasta durante 10 minutos . Escurrir y dejar secar sobre un papel de cocina limpio. Es importante no cocer demasiado la masa y dejar que se quede con el diente. En el envase, podemos ver las instrucciones de cocción del fabricante.
  2. Cortar el extremo inferior de los espárragos. Picar el resto en rodajas y saltearlas en aceite de oliva.
  3. Vierta la harina sobre los espárragos en la sartén y luego la leche, revolviendo para evitar grumos . Añadir los condimentos y dejar cocer a fuego lento durante cinco minutos. A continuación, retirar de la sartén y dejar enfriar.
  4. Colocar el pollo cocido y sazonado en trozos y añadirlo al resto del relleno. Añade un toque final de sal al conjunto.
  5. Llenar los canelones, colocarlos en una bandeja y cubrirlos con queso. Dejar gratinar en el horno. Servir los canelones de espárragos trigueros decorados con perejil.
